      Giant Vanilla Cupcake

      Cupcakes! I don't think this really comes as a surprise to anyone who knows me, but a long-term goal of mine is to own a vegan cupcake and specialty cake shop. I really love decorating cupcakes and cakes, and looove to bake. So, expect a kick-ass cupcake shop somewhere nice in a decade or two.

    haha yeah, I would be skeptical too, but I have a bunch of friends/bandmates who are vegan and I've concocted all sorts of recipes... really it's just substituting apple sauce for eggs or something like that, and it almost makes them even sweeter. And I was surprised to learn that most icing that professional cake-decorators use is already vegan, because they can't use any icing that can spoil over time if the cake is sitting out. Even still, give me buttercream frosting any day and I will fall weak in the knees and probably eat the whole thing :)
