Cream cheese mashed potatoes
My aunt makes them like this - you skin the potatoes, cut them into little squares, then cut a block of cream cheese into little squares, put them in a big mixing bowl and blend them with a hand mixer. They are delicious. We only fix them twice a year, Thanksgiving and Christmas.
