I'd buy 1,000 more lottery tickets.
No, just kidding. I can't pick just one way to spend 1,000 bucks. There's a lot I could do with it. I don't have any significant debt, other than my mortgage, so at least I don't have to feel compelled to spend it on that.
I am at a complete loss with this question. It's the same question I am plagued with when my husband asks me what I want for Christmas. But the biggest issue there is that I don't want to tell people what I want for Christmas. I want to be surprised. I also feel very uncomfortable handing someone a list and saying "Here, buy this for me."
So, back to the $1,000.
I don't know.
I have everything I could possibly want or need. I am fortunate, lucky, and blessed.
I am sure that if the money was put into my hand, I'd find a use for it. How 'bout you give me the money, and I'll let you know.

OK, it was Sydney, not San Francisco. For some reason the map is showing San Francisco. Whatever.
Anyway, it was remarkable because I used to make something $50-80 per weekend night sitting on a milk crate on George Street in Sydney (near the Rocks). People would stop and listen and if they knew the words they sang along. But they'd always toss a few coins after they finished listening to me. And those coins added up, and I was able to make enough money to travel and see the country. People brought me cups of tea, ice cream cones, sandwiches and gave me rides home.
The bank tellers hated me on Monday mornings, however. I'd roll into the bank with a canvas hat filled with change. They glared at me. A lot.
