    • My husband
      • My husband has Post Trumatic Stress disorder. This being a fact, we sleep with a TV on, sound set to a low volume. I preferr no sound and no light. When the screen changes or flickers I wake up. What do I find when I wake up?? My husband, that dear sweet man, sitting on the side of the bed asleep. His excuse when I ask? I didnt want to wake you up, you were sprawled across my side when I came back from the bathroom. You looked so peacefull. Hmmm yea well what about you mister man!!

    • My Favorite Comfort Food: Lessons from the Past
      • Mama's Enchalada

My favorite comfort food would have to be authentic Mexican food. When I was a teen I had a friend who's grandmother owned a little mexican cafe down in the bario. She didnt speak a word of english but I worked for her for free during the summers. She made all the food fresh. Fresh flour tortillias refried beans, carne asada. During the holidays we would spend a weekend making tamales for those that ordered them for the holiday celebrations. Sweet tamales, pork, beef and chicken.
Now as an adult, I make the tamales. It is very time consuming and tedius work but I get satisfaction. Satisfaction in knowing I am carrying on a tradition of our neighbors to the south.
For a quick fix for that comfort craving I make a chicken enchalada casserole. I dont have the time to roll them, so make it like a mexican lasagna. OOh the cheesy gooy goodness of cheese, chilie verde, chicken and fresh corn tortillas... I am having some tonight!

    • My Question In Need of an Honest Answer
      • I would go back in time to when my father was alive and ask him...
Do you see me?? Do you see who you have created? Do you believe I exist still? Do you know how much I love you, even though you dont think I am here, right here in front of you??? Why did you start drinking again when mom found me?? Is it my fault you drank yourself to death?? Should I have came to you sooner?? Do you love me now? Is your death my fault, is it??
