Oh potatoes. How do I love thee? Let me count the ways. You are delicious baked with butter and sour cream, maybe some chives sprinkled on top. You are yummy crunchy and friend, maybe shredded. And those teeny red ones and great roasted up. And let's not forget mashed, on top of a shepherd's pie, or as the creamy high point of bangers and mash. And then chips! Without which how could one eat a sandwich? And would leeks ever get to participate in soup with lovely potato? Maybe. But it would be a hollow, lonely existence.
